Growing up in rural South Carolina at the time that I did it was not uncommon to find folks doing things for themselves.
Things like working a garden, canning their own vegetables, etc.
One of my fondest memories from childhood is of my Grandmother grinding sausage at her kitchen table.
About three weeks ago I got a pleasant flash back to those days when a friend, Nathan Hall, invited me to like his Facebook page for Uncle Hamp’s Carolina Bacon. He didn’t have to invite me twice.
You see Uncle Hamp Barr was real person. Everybody knew him. He was one of those folks that you called Uncle even though you weren’t actually kin. And like my Grandmother Uncle Hamp worked in his smokehouse to produce among other things a thick cut, salt and pepper with molasses cured bacon.
This is the type of home cured bacon where the spices are rubbed into the meat by hand and over time until every bit of the meat is saturated. You taste the flavor with every bite.
Nathan wanted to bring a bacon to market that was as close to Uncle Hamp’s recipe as he could get. And just like Uncle Hamp hand rubbing in the spices Nathan has taken his time developing his product, working out every detail unit he was satisfied with it. He told me that he had over three years invested in this project.
Nathan was kind enough to let me get my hands on a sample.
After I cooked a healthy share of it for myself I passed the remaining portion of the meat around to my kids and other family members so they could give it a try.
Nathan, I proud to tell you met your goal my brother. All of my family agree Uncle Hamp’s Carolina Bacon is the real deal! This is a bacon worthy of being called bacon.
